2AM & it's Thanksgiving Day

I'm so tired, but Kai and I discovered sweet potato cobbler and we're making it for tomorrow! I'm excited. Kai loves sweet potatoes and I love cobblers, so we're having a good time. I'm just happy to be able to be in Michigan with our families and I'm more than happy to be not working at the bank like I was last year. Crazy to think about that since it was a year ago. I hated my job and everything about it. I learned valuable lessons there though and met an amazing girl who also connected to God the way I did. Our flight to Michigan felt like forever because it's such a journey to get here. We had a connecting flight in Chicago and it was packed! So many people flying around for the holidays. You could see everyone's stress and anxiety on their faces because of early flights, delayed flights, cancelled flights, anything that pushed back their plans with families. I feel for them. I'm thankful that Kai and I landed in Grand Rapids safe and sound. That's one of the things that I always pray for. 

About this sweet potato cobbler... Since I'm always on YouTube watching Chef John, I was searching for Thanksgiving recipes and I came across a YouTuber named Rosie. Her channel is called I Heart Recipes and the first video I saw of hers was mac and cheese. I drooled. It looked delicious, so I kept looking at her other videos. Once I saw the words sweet potato and cobbler together, I told Kai immediately. We were determined to make this dessert for Thanksgiving! She has other recipes, so everyone check her out. 

I'm so ready to eat tomorrow (or should I say today? Since it's 2am). Kai's mom already has four sweet potato pies baking in the oven and the smell made me so happy. I love the feeling that Thanksgiving brings in the air. It's the best time to genuinely enjoy family and food. My mom wants me to come over around 10 or 11am to help her make mashed potatoes. My love for potatoes is serious as ever. I love potatoes with all of my heart. Too bad it's all carbs. Ugh! Why, God!? Why! I did hear that replacing potatoes with cauliflower makes it healthier to eat and also tastes exactly the same. I just need to buy a food processor. I still need to buy a lot of kitchen stuff because I need to be ready by February when Chrissy Teigen's cookbook comes out. She's obsessed with Ina Garten as much as I am!!! That makes me happy. She always makes Ina's tomato basil soup.

This post was random, but I'm happy. I'm so happy I'm gonna enjoy Thanksgiving with no work, with my husband, and with lovely family. We were just playing Super Smash Bros. and Mario Kart 8 with all of Kai's cousins.
